This is such a yummy dish and super weight friendly! Chicken, Artichoke & Spinach Casserole .

I got it from Iowa Girl Eats.  It's 8 servings for 8P+ per serving!  I used whole wheat rigatoni instead of regular and the best super shredded mozzarella cheese instead of colby jack.  I'm learning that it's all about the quality of your ingredients.  Grated parmigiano-reggiano, quality mozzarella, hormone free chicken breast tenders, spinach, artichoke hearts, soooo good.
- This isn't a salad plate either, it's a full blown dinner plate!  I paired my pasta dish with 3/4 cup steamed asparagus.
